Istarska bjelica

Istarska Bjelica is one of the most famous native Istrian varieties. It mainly grows in northern Istria, but it is also found in the Slovenian part of Istria and in the area around Trieste in Italy.

It ripens late, and its technological maturity is visible when the skin changes from green to green-yellow. It is highly productive and relatively consistent in its yields. The tree has upright branches, and its leaves are spiral and curled, which makes it easy to recognize.

It has a high oil yield, and it is characterized by pronounced bitterness and increased spiciness, with a taste reminiscent of fresh pine, mild wormwood, and covering all other attributes. It is resistant to low temperatures and thrives in cooler and windier locations. 

It pairs best with meat dishes, particularly beef, as well as with porcini mushrooms, asparagus, and hard cheeses. It is recommended for those who prefer moderately intense oils, enhancing the taste of various dishes, such as beef, seafood, mushroom soups, beans, and chickpeas.
