There are several biotypes of Buža, but a common characteristic is that they have large, round, and occasionally slightly heart-shaped fruits with skin that turns purple when ripe. The leaves are dark green, elongated, and firm. Buža is sensitive to adverse weather conditions during flowering, which can result in significantly reduced yields in some years. The average fruit weight is over 4 grams, and it is highly resistant to low temperatures. Buža is used for both preservation and table olives. 

Buža olive oil is light green to golden yellow, with a strong fruity aroma, primarily reminiscent of apple, an excellent flavor with herbal, chicory, and almond notes. It often contains grassy and floral scents, balanced bitterness, and spiciness. It is also characterized by pleasant bitterness with a more pronounced spiciness. Buža olive oil complements fresh raw ingredients and pairs well with bluefish, especially tuna and salmon, seasonally grilled vegetables, mushrooms, and enhances the flavor of various seafood risottos and other aromatic dishes.

When stored in a cool, dark place away from heat, light, and air, unopened Buža olive oil can retain its quality for up to 2 years or more. Once you open a bottle of Buža olive oil, its shelf life is generally shorter. It is best to consume it within 3 to 6 months to enjoy its peak flavour and aroma.
