Romano was the second grandfather of the Chiavalon brothers who was a big fan of fish specialties. This oil is a blend of the two varieties Buža and Rošinjola that give the oil a fresh and pronounced aroma of bananas, unripe tomatoes and apples. The taste is gently piquant and slightly bitter. It is perfect for fish dishes and the recommendation is to use it with fish carpaccio.
