Creating top-quality extra virgin olive oil is no easy task. Besides facing numerous challenges in the agronomic sense, olive oil producers must know the right time to harvest, how to properly process the olives, and then take care of various aspects to ensure the oil is correctly stored and preserved.<\/p>\n\n\n\n

But when you have 13 different olive varieties from which you produce 13 single-varietal oils and one blend, it becomes an incredible endeavor! It requires a lot of knowledge, patience, and tremendous effort.<\/p>\n\n\n\n

Bosiljka and Duilio are exactly such a couple. Their energy is contagious, and their years of knowledge and experience are unparalleled. Bosiljka is an agronomist, and under her guidance, the olive trees are healthy, robust, and full of fruits. Duilio, on the other hand, carefully ensures that high-quality fruits turn into exceptional oil and remain that way long after it reaches the homes of their customers. Additionally, they are great connoisseurs of pairing food and olive oil.<\/p>\n\n\n\n

Olive groves in Fa\u017eana<\/h3>\n\n\n

The olive groves are located in Fa\u017eana, near Pula, in Istria, and you will find the following olive varieties in them: bu\u017ea, vodnjanska crnica, pendolino, maurino, leccino, itrana, ascolana tenera, frantoio, istarska bjelica, casaliva, rosulja, cipressino, and the French variety picholine. Each variety imparts its specific aromas and flavors, and the Beli\u0107 family showcases their pinnacle of skill in a delicately balanced blend of oils called “SELEKCIJA BELI\u0106”<\/em><\/strong>.<\/p>\n\n\n\n
